Grilled plums & goat cheese pizza

Goat cheese, crumbled Gorgonzola, grilled plums, sautéed red onions, pine nuts, fresh herb vinaigrette, arugula

 

Recipe

Ingredients: 1 ball of dough flour for dusting

semolina flour for pizza stone salt & pepper olive oil 4 plums, cut into wedges handful of arugula handful of pine nuts 1 log goat cheese, crumbled ½ cup crumbled Gorgonzola 1 small red onion, thinly sliced

For the vinaigrette: ¼ cup balsamic vinegar 1 teaspoon honey 1 tablespoon parsley, minced 1 tablespoon chives, minced 1 tablespoon basil, minced 1 clove garlic, minced ¼ cup olive oil salt & pepper to taste

Directions: Preheat your oven to 550° F, and your grill pan to medium. While these are heating up, you can start to saute your onions. Heat a tablespoon of olive oil over medium heat and saute them with some salt & pepper until softened, but still with a little bite to them.

When your grill pan (or Griddler, or whatever) is hot, grill the plum wedges for a couple minutes on each side, until they have some nice brown grill marks.

Meanwhile, make your vinaigrette by combining all of the ingredients (minus the olive oil), and then slowly whisking in the oil.

When your oven is hot, prepare your dough using the instructions on the right. Once you’ve baked it for a minute, take it out and brush it lightly with olive oil.

Next, sprinkle the cheeses on top, followed by the onions, plums & pine nuts. Drizzle about half of the vinaigrette over the pizza and pop it in the oven, baking until the crust is a nice golden brown. Then add the arugula, drizzle the remaining vinaigrette, and enjoy!

HOW TO PREPARE DOUGH

Start stretching it from the center, then move it around in a circle so that gravity stretches it and creates a natural crust. It helps to put some olive oil on your hands first.

Place the dough on your floured surface & push it out with your fingertips until it's the size of your pizza stone. You can fold over the edges to create an extra fluffy crust.

When the oven is hot (preheat it with the stone inside), sprinkle some semolina flour on the pizza stone and place your dough on it.

Bake it for about a minute, or until it starts to bubble, then take it out. This last step isn't 100% necessary, but I feel like it adds a little extra crispiness to the crust.
